Toyga soup is a popular and nutritious soup of Turkish cuisine. This soup, especially preferred in the winter months, is prepared with a combination of chickpeas and wheat. Here is a recipe for Toyga soup that you can easily make at home:

Ingredients

  • 1 cup of wheat for pudding
  • 1 cup of chickpeas (boiled)
  • 6 cups of broth or chicken broth
  • 1 teaspoon of salt
  • 1 teaspoon of dried mint
  • 1 teaspoon of red pepper flakes
  • 1 tablespoon of butter
  • 2 tablespoons of olive oil
  • 1/2 cup of yogurt
  • 1 egg
  • 2 tablespoons of flour

How to make

  1. Prepare the wheat and chickpeas: Soak the wheat for pudding in water the night before, then drain the water and put it in a pot. Add the meat or chicken broth. Put it on the stove and let it boil. After it boils, reduce the heat and cook for about 30-40 minutes until the wheat softens.

  2. Soup seasoning: Put the yogurt, egg and flour in a bowl and whisk well. Add some hot water to the mixture and stir until it is lukewarm, then slowly add it to the soup. Continue cooking while stirring.

  3. Add spices: After the soup boils, add salt, mint and red pepper flakes. Enhance its flavor with spices.

  4. Oily mixture: Melt the olive oil and butter in a pan, add the red pepper flakes and mint. When the oils are well heated, pour this mixture over the soup.

  5. Final touches: Check the consistency of the soup, if it is too thick, you can add a little more hot water. Finally, continue cooking on low heat for 10-15 minutes.

  6. Serving: Once the soup reaches the consistency, remove it from the stove and serve hot.

Enjoy!
