Tarhana Soup (Serves 6)

Tarhana soup is one of the indispensable flavors of Turkish cuisine. It is preferred as a hot soup in the winter months and is known for its nutritious properties. Here is a Tarhana Soup recipe that you can easily make at home:

🕒 Preparation: 5 min | Cooking: 20-25 min 🍲 Number of people: 6

Ingredients:

  • 6 tablespoons of powdered tarhana
  • 2 tablespoons of tomato paste
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1 clove of garlic (optional)
  • 8 cups of water (preferably mixed with meat broth or chicken broth)
  • Salt
  • Red pepper flakes, mint (for topping)

Preparation:

  1. Mix the tarhana with 1 cup of cold water in a bowl and wait for 10 minutes (so that it does not clump).

  2. Put the butter and olive oil in the pot. When the oil melts, add the crushed garlic and tomato paste and fry for 1-2 minutes.

  3. Add the soaked tarhana to the pot, stir and fry.

  4. Then add 7 cups of hot water (or broth) little by little. Stir constantly to make the soup thicker.

  5. After it boils, reduce the heat and cook for about 15 minutes. Stir occasionally so that it doesn’t stick to the bottom.

  6. Adjust the salt.

  7. You can sprinkle mint and red pepper flakes on top when serving.

Serving Suggestion:

  • It goes great with hot pita or village bread.

  • You can pour heated butter on top if desired.
