🌿 Tahini Soup Recipe (For 6 People)

Region: Southeastern Anatolia Servings: For 6 People Preparation Time: 10 min Cooking Time: 25-30 min

🥣 Ingredients

  • 1 cup fine bulgur
  • 6 cups hot water
  • 1 cup tahini
  • 1 onion (chopped finely)
  • 2 tablespoons olive oil or plain oil
  • 1 teaspoon dry mint
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • (Optional) 1 clove garlic (crushed)

👨‍🍳 Preparation

  1. Fry the onion: Heat the olive oil in a pot, fry the finely chopped onions until they turn pink.

  2. Add the bulgur: Add the bulgur, fry for a few minutes, then add the hot water. Cook on medium heat until the bulgur softens (about 15-20 min).

  3. Prepare the tahini mixture: In a separate bowl, warm the tahini with a ladle of soup water until smooth. This step prevents the tahini from curdling.

  4. Add the tahini: Add the tahini that you have warmed to the soup little by little, stirring constantly so that it does not curdle. Cook on low heat for another 5-10 minutes.

  5. Season with spices: Add mint, black pepper, salt and chili pepper if desired. Boil for 1-2 minutes and remove from heat.

🍽️ Serving Suggestion

  • You can serve by drizzling heated mint oil on top.
