Ingredients

For bell peppers:

  • 12 medium-sized bell peppers
  • 1 teaspoon salt (to sprinkle inside the peppers after washing them)

For stuffing:

  • 1.5 cups rice
  • 2 onions
  • 2 tomatoes (grated)
  • 1 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1 tea glass olive oil
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon allspice
  • 1 teaspoon dried mint
  • 1 teaspoon cinnamon (optional)
  • Half a tea glass of currants (optional)
  • Half a tea glass of pine nuts (optional)
  • Half a bunch of parsley (finely chopped)
  • 1 cup hot water (to cook the stuffing)

For cooking:

  • 1.5 water cup hot water
  • 2 tablespoons olive oil
  • 1 teaspoon tomato paste

Preparation Steps

  1. Prepare the Peppers: Cut the tops of the bell peppers in the shape of a cap. Clean and wash the seeds. Sprinkle some salt inside and turn them upside down to drain.

  2. Prepare the Filling: Heat the olive oil in a large pan. Add the pine nuts (if you are using them) and fry lightly. Then add the finely chopped onions and fry until they turn pink. Add the tomato paste, grated tomato, washed rice and currants and fry for a few minutes. Add salt, sugar, spices and hot water and mix. Cook on low heat until the water is absorbed (the rice will not be fully cooked). Remove from the stove, add the finely chopped parsley and mix. Let it cool.

  3. Stuff the Peppers: Fill the peppers with the stuffing you have prepared without pressing too hard. You can cover them with tomato slices.

  4. Cooking: Pour 2 tablespoons of olive oil over the stuffed peppers you have arranged in the pot. Melt the tomato paste in hot water and pour it over the peppers. Cook on low heat until the peppers soften (about 30-40 minutes).

  5. Serving: You can serve it warm or cold with lemon slices. Since it is made with olive oil, it will be even more delicious if made the day before.
