🥣 Cold Ayran Soup (For 6 People) – Summery Coolness
🧾 Ingredients
- 1 cup wheat (cracked wheat or aşure wheat)
- 1 cup boiled chickpeas
- 2 cups yoghurt
- 1 cup cold water (if necessary (can be increased)
- 4-5 sprigs of fresh mint (dried mint is also possible)
- 1 teaspoon of salt
- 1 teaspoon of black pepper (optional)
🌿 Optional Additions
- 1 cucumber (chopped small)
- A few sprigs of dill or parsley
- 1 clove of crushed garlic (can be mixed with yogurt)
👩🍳 Preparation
Soak the wheat overnight. The next day, boil it in plenty of water, drain and let it cool.
Mix the boiled chickpeas with the wheat.
In a separate bowl, dilute the yogurt with water. Beat until it reaches a smooth consistency.
Flavor the yogurt with salt, finely chopped mint (and other herbs if you have them).
Add the wheat-chickpea mixture to the yogurt. Adjust the consistency with water if necessary.
Chill in the refrigerator for at least 1 hour. Serve cold.
You can garnish with mint leaves or dried mint sautéed in olive oil.
💡 Tip
This recipe is best when the ingredients are thoroughly chilled. Ice can also be added before serving.
If you want to make it vegan, you can replace the yogurt with plant-based yogurt.
