🧅 Onion Soup (Anatolian Style) – Serves 6
Ingredients:
- 4 large onions
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon flour
- 6 cups hot broth (or chicken broth – hot water will do)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried mint (optional)
- 1 teaspoon vinegar (for depth of flavor – optional)
For topping (optional):
- Toasted bread cubes
- Grated old kashar or tulum cheese
Preparation:
Prepare the onions: Cut the onions into half-moon slices. Chopping them thinly increases the flavor.
Heat the oil: Put the butter and olive oil in a pot, melt over medium heat.
Fry the onions: Add the onions, fry patiently over low heat until they caramelize (about 15-20 minutes). Their color should turn from golden yellow to brown but should not burn.
Add the flour: Add the flour, fry while stirring for 2-3 minutes. This gives the soup consistency and a slightly toasted flavor.
Add the liquid: Add the hot meat/chicken stock little by little, stirring to prevent lumps.
Seasoning: Add salt, pepper and dried mint if you like. If you want a little acidity, add the vinegar at this stage.
Cooking: Simmer on low heat for 15-20 minutes. If the soup has thickened, it is ready to serve.
Serving Suggestion:
Pour into bowls, sprinkle with toasted bread cubes and grated kashar/tulum cheese and serve hot. It goes great with hot pita or village bread.
