🛒 Ingredients:
- 3 medium-sized eggplants
- 1.5 cups of boiled chickpeas (approximately 1 can of canned chickpeas can also be used)
- 1 red capia pepper
- 1 green pepper
- 10-12 sprigs of parsley
- 1 small red onion
- Juice of 1 lemon
- 3 tablespoons of olive oil
- 1 clove of garlic (crushed)
- 1 teaspoon of pomegranate syrup (optional)
- Salt
- Black pepper
- Red pepper flakes (optional)
🔥 To Roast the Eggplants:
- You can roast them on the stove, in the oven or on the barbecue.
- If you want to make them in the oven: Pierce the eggplants with a fork in several places and roast them in a preheated oven at 200°C for 30-35 minutes.
- If you keep the roasted eggplants in a bag for 10 minutes before peeling them, they will be easier to peel.
👩🍳 Preparation Steps:
Roast the eggplants, peel them and chop them into large pieces.
Drain the chickpeas and wash them, then put them in a salad bowl.
Chop the capia and green peppers into small cubes. If you wish, you can also use them by roasting them in the oven for a while.
Chop the onion into thin half-moon shapes. If you wish, you can get a milder taste by rubbing it with salt, waiting for 5 minutes and washing it.
Finely chop the parsley and combine all the vegetables with the chickpeas in a large bowl.
Prepare the sauce by mixing olive oil, lemon juice, crushed garlic, salt, black pepper and pomegranate syrup in a separate bowl.
Pour the sauce over the salad and mix gently.
The flavors will settle better if you let it rest in the refrigerator for 15-20 minutes before serving.
📝 Serving Suggestion:
- This salad can be made richer by adding olives, white cheese or walnuts.
- You can serve it either as a cold appetizer plate or as a side dish with the main course.
- It goes great with grilled meats or olive oil tables, especially in the summer months.
🧡 Health Note:
The eggplant and chickpea duo is very rich in both fiber and vegetable protein.
It is a heart-healthy option with its olive oil and lemon sauce.
Suitable for vegan and vegetarian diets.
