🥘 Odorless Mutton Roast Recipe (For 4 People)

🍖 Ingredients:

  • 800 gr lamb cubes (fat and nerves removed)
  • 2 tablespoons olive oil
  • 1 large onion (for cooking chopped)
  • 2 cloves of garlic (crushed)
  • 1 teaspoon of thyme
  • 1 teaspoon of cumin
  • 1 teaspoon of black pepper
  • 1 teaspoon of ground red pepper
  • 1 bay leaf
  • 1/2 lemon zest (optional)
  • 1 tablespoon of apple cider vinegar (at the end of cooking)
  • Salt (to taste)
  • 1 tea glass of hot water (if necessary)

🔪 Pre-preparation

  1. Marinate the meat (optional but effective): You can soak the meat in a mixture of onion juice, lemon juice, thyme and olive oil for 1 hour.

  2. Soak the meat in water: Soak in lemon or vinegar water for 30 minutes and rinse to reduce the strong odor.

👨‍🍳 How to make

  1. Put the olive oil in a pan and heat it. Add the onions and fry until they turn pink.
  2. Add the garlic and meat. Fry on high heat until the meat releases and absorbs its juices.
  3. Add the spices and bay leaf. Cumin, thyme and black pepper are especially effective in suppressing the smell.
  4. Add the lemon zest (optional).
  5. Add a little hot water if the meat is tough. Cook on low heat with the lid closed for 30-40 minutes.
  6. Drink 1 tablespoon of apple cider vinegar when it is almost cooked. The vinegar both balances the smell and completes the meat with a slightly sour taste.
  7. Add salt last. It is better to add salt close to cooking to prevent the meat from toughening.

🧂 Serving Suggestion

  • Bulghur pilaf, roasted eggplant with yogurt or hot pepper pickle go very well with it.

  • Don’t forget to sprinkle fresh parsley on top!
