Mung Bean Soup Recipe (Serves 6)

Preparation Time: 15 minutes Cooking Time: 40 minutes Total Time: 55 minutes

🥣 Ingredients

  • 1 cup mung bean
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • 1 potato
  • 1 tomato (or 1 tablespoon tomato paste)
  • 1 tea glass olive oil
  • 6 cups hot water or vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon red pepper powder
  • Optional: 1 teaspoon lemon juice or juice of ½ lemon
  • For the top: Finely chopped parsley or fresh mint

👩‍🍳 Preparation

  1. Prepare the mung bean: If you soak the mung bean overnight, it will cook more easily. If you don’t have time, you can soak it in hot water for about 1 hour. Drain and set aside.

  2. Chop the vegetables: Chop the onion into small pieces and finely chop the garlic. Cut the carrots and potatoes into small cubes. Grate the tomatoes if you are using them.

  3. Fry the onions: Pour olive oil into a pot, add the onions and fry until they turn pink. Then add the garlic, fry for 1 more minute.

  4. Add the vegetables: Add the carrots and potatoes to the pot and fry for a few minutes. Add the grated tomato or tomato paste, cook for another 2-3 minutes.

  5. Add the mung beans: Add the drained mung beans to the pot. Pour hot water (or vegetable stock) over it.

  6. Add the spices: Add salt, black pepper, cumin and red pepper. Stir and let it boil.

  7. Cooking: After the soup boils, reduce the heat and cook with the lid closed for 30-35 minutes. Continue to cook under control until the beans are soft.

  8. Serving suggestion: You can add lemon juice to the cooked soup. You can sprinkle finely chopped parsley or mint on it when serving. If you wish, you can increase its flavor by drizzling some olive oil on it.

🍽️ Tips

  • If you like the consistency of your soup, you can blend it; however, it is also quite filling in its grainy form.
  • Cumin reduces the gas-producing effect of mung bean; therefore, it is definitely recommended in the recipe.
  • You can also prefer meat broth instead of vegetable broth, but vegetable broth is ideal for a vegan/vegetarian recipe.
