One of the indispensables of the winter months, tarhana soup increases its nutritional value and taste when combined with red lentils. Here is a soup recipe that is both filling and a source of healing: Lentil Tarhana Soup.
Ingredients
- 6 tablespoons of powdered tarhana
- 1 tea glass of red lentils
- 1 medium onion
- 1 tablespoon of tomato paste
- 1 tablespoon of pepper paste (optional)
- 2 tablespoons of olive oil (or butter)
- 8 cups of hot water (1-2 cups of meat/chicken stock can also be added if desired)
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of chili pepper
- 1 teaspoon of mint
Preparation
1. Preparation Stage:
- Put the tarhana in a bowl and let it sit with 1 cup of warm water for 10-15 minutes.
- Wash and drain the lentils.
2. Fry the Onion:
Put the olive oil (or butter) in the pot.
Fry the finely chopped onion until it turns pink.
Then add the tomato paste and pepper paste, fry for a few more minutes.
3. Add Lentils:
Add the washed lentils to the pot and fry for 1-2 minutes.
Pour 8 cups of hot water over it.
Boil over medium heat until the lentils soften (about 15 minutes).
4. Add Tarhana:
Slowly add the previously soaked tarhana to the soup while stirring constantly so that it does not clump.
Boil over medium heat for another 10-15 minutes, stirring constantly.
5. Add Spices:
Add salt, black pepper, chili pepper and mint and stir.
If your soup has thickened, you can remove it from the stove. If necessary, you can add some more hot water and adjust the consistency.
Serving Suggestions
- Serve hot. Optionally, you can pour mint in heated butter on top.
- Sliced village bread or pickles go great with it.
Tips
- Pre-soaking the tarhana prevents clumping.
- Boiling the lentils with the tarhana without over-boiling them increases the integrity of the flavor.
- You can adjust the consistency of the soup according to your taste by playing with the amount of water.
