  • 6 cups hot chicken stock or water
  • Salt

  1. Fry the onion: Put the oil and butter in the pot. Add the onion and fry until it turns pink.

  2. Add the tomato paste:

Add the tomato and pepper paste, if you have it. Sauté for 1-2 minutes to remove the smell of the paste.

  1. Add the couscous:

Add the couscous and sauté for another 1-2 minutes, this will make it more delicious.

  1. Add the water and spices:

Add the hot chicken stock or plain water. Add salt, black pepper, dried mint and chili pepper to taste.

  1. Boil and cook:

Simmer on medium heat for about 15-20 minutes until the couscous is tender. If the couscous absorbs too much water, you can add a little hot water.

  1. Serving suggestion:

Serve hot. You can serve with fresh mint or lemon slices on top.

💡 Tip

  • Using broth or chicken broth adds extra flavor to the soup. *If the couscous swells too much, you can thin the soup with a little hot water.
