Ingredients

  • 1 cup green lentils
  • 1 onion
  • 1 carrot
  • 1 medium potato
  • 2 tablespoons olive oil (or oil)
  • 1 tablespoon tomato paste
  • 6 cups hot water (chicken broth or meat broth can also be used if desired)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon red pepper flakes (optional)

For the Top (Optional)

  • 1 tablespoon butter
  • 1 teaspoon mint

Preparation Stage

  1. Prepare the Lentils: Wash the green lentils in plenty of water. Add enough water to cover them and boil for 10 minutes. Then drain the water.

  2. Chop the Vegetables: Chop the onion. Cut the carrots and potatoes into small cubes.

  3. Sautéing: Put olive oil in the pot. Add the onion and fry until it turns pink. Then add the carrots and potatoes and continue to fry for another 4-5 minutes.

  4. Add the tomato paste: Add the tomato paste and cook, stirring for 1-2 minutes. Then add the drained lentils.

  5. Add the water: Add the hot water to the pot. After adding the salt and spices, close the pot lid.

  6. Cooking: Cook on low heat for about 25-30 minutes until the lentils and vegetables are soft.

  7. Blender (Optional): You can blend it for a smoother soup. If you want a grainy texture, leave it as is.

  8. For the topping: Melt the butter in a pan. Add mint (and chili pepper if you like) and heat slightly. Drizzle over the soup before serving.

Serving Suggestion

You can serve green lentil soup hot with lemon slices and toasted bread. Yogurt or pickles would also go great on the side.

Tips

  • Boiling the lentils in advance reduces their gas-producing effect and shortens the cooking time.
  • You can also add garlic, celery stalks or thyme if desired.
  • If the soup is too thick, you can add a little more hot water.
