Ezogelin Soup Recipe (Serves 6)
Ezogelin soup is one of the indispensable soups of Turkish cuisine. This soup, which is both nutritious and filling, is the crown jewel of tables, especially in winter. Here is a delicious Ezogelin soup recipe for 6 people, step by step:
Ingredients
- 1 cup red lentils
- 2 tablespoons fine bulgur
- 2 tablespoons rice
- 1 onion (finely chopped)
- 1 clove garlic (crushed)
- 1 tablespoon tomato paste
- 1 tablespoon pepper paste (optional)
- 2 tablespoons oil
- 1 tablespoon butter
- 1 teaspoon mint
- 1 teaspoon chili pepper
- 1 teaspoon black pepper
- 1.5 teaspoons salt
- 7 cups hot water (meat broth can also be used if desired)
- 1 teaspoon lemon juice (optional)
Preparation Steps
1. Wash the lentils, rice and bulgur
Wash them all with plenty of water several times and drain.
2. Fry the onion and garlic
Put the oil and butter in the pot. Fry the onions until they turn pink. Then add the crushed garlic.
3. Add the tomato paste
Add the tomato and pepper paste to the pot and fry for a few minutes to remove the raw smell.
4. Add the grains
Add the washed lentils, rice and bulgur to the pot. Mix the ingredients and fry for a short time.
5. Add the water
Add the hot water (or broth) to the pot. Let it boil over medium heat.
6. Season and cook
When the soup starts to boil, reduce the heat. Add salt, black pepper and chili flakes. Cook until all the legumes are soft (about 25–30 minutes).
7. Add mint
In a separate pan, lightly fry 1 teaspoon of mint with a little oil and add to the soup.
8. Blend (optional)
If you want a smooth consistency, you can blend the soup. It is also possible to leave it grainy for a traditional taste.
9. Prepare to serve
You can optionally add lemon juice when serving, and serve with hot pita bread or lemon slices.
Tips
- You can use homemade meat broth to make your soup more delicious.
- Be sure to add tomato paste by frying it with oil; the flavor of the soup increases.
- Lemon juice and mint are characteristic touches of Ezogelin soup. Adjust the amounts according to your taste.
Enjoy! I definitely recommend you to try this traditional flavor to your tables.
