- 1 cup fine bulgur
- 1 cup flour
- 1 egg
- 1 teaspoon salt
- 1 teaspoon chili pepper
- 1 teaspoon dried mint
- 5 cups water (can be increased if necessary)
- 2 tablespoons butter
- 1 tablespoon tomato paste (tomato-pepper mix can be preferred)
How to make
Dough Preparation: In a large bowl, add fine knead bulgur, flour, egg, salt and 1 cup of water to obtain a hard dough.
Shaping the Dough: Take chickpea-sized pieces from the dough you have prepared and roll them. (You can take them with your fingers and press them lightly to save time.)
Boiling: Boil 5 cups of water in a pot. Boil the dough balls in the water for 10-15 minutes.
Preparing the Sauce: Melt the butter in a separate pan and fry the tomato paste, mint and red pepper flakes.
Meeting: Add the tomato sauce you have prepared to the pot. Boil for another 5 minutes while stirring.
Serving: Serve hot. You can serve it with pickles or spring onions.
💡 Tips
- If the dough is soft while preparing, add a little flour.
- If the soup is thick, you can thin it with hot water. * In the traditional recipe, yoghurt is not added, but those who want can diversify it with lemon when serving.
