🥣 Bulgur Tarhana Soup Recipe (Serves 6)

Bulgur Tarhana Soup is a popular and nutritious soup of Turkish cuisine. This soup, especially preferred in the winter months, is prepared by combining tarhana with bulgur. Here is a recipe for Bulgur Tarhana Soup that you can easily make at home:

Time: 30 minutes

Preparation: 10 minutes Cooking: 20 minutes

Ingredients

  • 4 tablespoons powdered tarhana
  • 2 tablespoons fine bulgur
  • 1 tablespoon tomato paste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 6 cups water (half water, half broth, if desired)
  • 1 clove garlic (crushed)
  • Salt
  • Black pepper
  • Dried mint (for topping, optional)

Preparation

  1. Soak the tarhana: Soak the tarhana in 1 cup warm water for 10-15 minutes. It prevents clumping and ensures more homogeneous cooking.

  2. Melt the butter: Put the butter and olive oil in a pot. When it is hot, add the tomato paste and fry until the smell comes out.

  3. Add tarhana and water: Add the soaked tarhana to the pot. Add 5 cups of water little by little. Let it boil, stirring constantly.

  4. Add bulgur: When the soup starts to boil, add the fine bulgur and crushed garlic. Cook on medium heat for about 15 minutes until the bulgur softens.

  5. Season with spices: Add salt, pepper and any spices you like. If you like, you can sprinkle some dried mint on top.

  6. Serving: Serve hot with fresh bread. Roasted peppers or pickles also go very well with it.

📝 Tip: Soaking tarhana in water beforehand provides a smoother texture and allows it to cook in a shorter time. With bulgur, its nutritional value increases and its consistency becomes more filling.
