Black Eyed Peas Soup Recipe (Serves 6)
A delicious, nutritious and quite filling Aegean cuisine classic, black eyed peas soup is one of the indispensable dishes on tables, especially in the winter months. Here is our step-by-step recipe:
✅ Ingredients:
- 2 cups of dried black-eyed peas
- 1 onion
- 2 cloves of garlic
- 1 carrot
- 1 tomato (or 1 tablespoon tomato paste)
- 5 cups of water (you can add extra if necessary)
- 2 tablespoons of olive oil
- 1 teaspoon of red pepper powder
- 1 teaspoon of cumin
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- Juice of 1/2 lemon (optional)
🥣 Preparation Stage:
Preparing the Black-Eyed Peas: Soak the black-eyed peas in water overnight. The next day, drain the water and boil it in clean water for 10 minutes and drain.
Sautéing the Vegetables: Put olive oil in the pot. Add diced onion and grated carrot and fry for 3-4 minutes. Then add crushed garlic.
Add Tomatoes or Tomato Paste: Add peeled and chopped tomatoes (or tomato paste). Cook until tomatoes are completely soft.
Add Black-Eyed Peas: Add boiled black-eyed peas to the pot. Pour hot water over it.
Spices and Cooking: Add salt, cumin, black pepper and red pepper powder. Mix. Close the pot lid and cook on medium heat for 20-25 minutes.
Finishing Touch: After your soup is cooked, add lemon juice and mix if desired.
🍽️ Serving Suggestion:
You can pour red pepper lightly roasted in olive oil over it.
You can serve it with toast or lemon slices.
Suitable for vegan/vegetarian tables.
💡 Tips:
- Cumin reduces the gas-producing effect of black-eyed peas and increases its flavor.
- If you like your soup smooth as if it were blended, you can blend some of it after cooking and mix it again.
- If you want to enrich it, you can add some boiled rice or fine bulgur.
