  • 1 clove of garlic (optional (depending on)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 cups water (chicken or vegetable broth can also be used if desired)
  • 1 tablespoon lemon juice

For the topping:

  • 1 cup yogurt
  • 1 clove garlic (crushed)
  • 1 tablespoon olive oil
  • 1 teaspoon powdered red pepper or mint

👩‍🍳 Preparation Steps

  1. Clean the broad beans: Cut the ends of the fresh broad beans, remove the bones if any and chop them.

  2. Fry the onion and garlic: Put the olive oil in the pot, add the finely chopped onion and fry until it turns pink. You can also add finely chopped garlic if desired.

  3. Add the flour: When the onions are fried, add the flour, fry for a few more minutes to make the soup thicker.

  4. Add the broad beans: Add the chopped broad beans to the pot and sauté for a few minutes while stirring.

  5. Add the water and spices: Add the water (or meat/bone/vegetable broth). Add salt, pepper and lemon juice and bring to a boil.

  6. Cook: Cook on medium heat for about 30 minutes. When the broad beans soften and start to fall apart, your soup is ready.

  7. Blend (optional): If you want a smoother soup, you can put it in a blender.

  8. Serving suggestion: Pour the sauce mixed with yogurt and crushed garlic over the soup. Serve with mint or red pepper powder in heated olive oil.

  • It can also be served cold or warm; It is a refreshing starter soup for summer tables.

📝 Tips

  • Be careful about the temperature of the soup before mixing the yogurt sauce, you can warm the yogurt so that it does not curdle.
  • If the broad beans are fresh, they can be used without peeling. However, if they are very large and hard, the outer shell can be peeled.
  • If you are going to use dried broad beans, do not forget to soak and boil them the night before.
